Ingredients

Ingredients for crockpot taco soup arranged on a marble countertop, including ground beef, beans, spices, and fresh toppings

Ground beef: Packed with protein, ground beef adds a rich, meaty flavor and makes the dish hearty and satisfying.

Yellow onion: Diced yellow onion cooks down to add a subtle sweetness and depth of flavor.

Taco seasoning: A carefully blended mix of bold herbs and spices, this seasoning gives the soup its signature taco-inspired flavor with just the right amount of warmth and smokiness.

Canned green chilies: These bring a gentle kick of tangy heat that’s not overpowering but adds a zesty layer of flavor that perfectly complements the taco spices.

Crushed tomatoes: A smooth, rich base that ties all the ingredients together, crushed tomatoes infuse the soup with a deep, tangy flavor.

Chopped tomatoes add flavor and variety to each spoonful, giving it a touch of texture and fresh bursts of tomato goodness.

Vegetable broth: The liquid backbone of the soup, vegetable broth melds the flavors together. You can make your own or buy canned.

Sweet corn: These little pops of sweetness and crunch provide a delightful contrast to the savory and spicy flavors in the soup.

Beans (kidney and black): Packed with protein and fiber, beans make the soup hearty and filling. The creamy texture of black beans and the firmer bite of kidney beans create a satisfying combination.

Lime: A squeeze of fresh lime juice right before serving brightens the flavors and adds a refreshing citrusy kick to round out the dish.

Optional toppings: The perfect way to make each bowl unique and let everyone customize their soup to their liking.

How To Make Taco Soup

  1. Start with the meat and onions: Heat a skillet over medium-high heat, add a splash of oil, and toss in the ground beef and diced onion. Cook them together until the meat is browned, and the onions are soft and fragrant. Drain it off if there’s any excess fat—nobody likes greasy soup!
  2. Move it to the crockpot: Transfer the delicious mixture straight into your crockpot once the meat and onions are ready. I use a 4.5-quart crockpot, but anything similar in size will do the trick.
  3. Add all the goodies: Now it’s time to throw in the rest of the ingredients! Add the taco seasoning, green chilies, crushed and chopped tomatoes, vegetable broth, corn, and both kinds of beans. Give it all a good stir to mix the flavors together.
  4. Set it and forget it: Put the lid on your crockpot and let it work magic. Cook on LOW for 4-6 hours or on HIGH for 3-4 hours. While it simmers away, your house will smell incredible!
  5. Taste and tweak: Taste the soup once the cooking time is up. Does it need a bit more salt or spice? Now’s the time to adjust. If it’s thicker than you’d like, stir in a little more broth until it’s perfect for dipping those chips.
  6. Add a fresh twist: Right before serving, squeeze the juice from half a lime into the soup. Trust me, that little burst of citrus takes the flavors to the next level!
  7. Pile on the toppings: Scoop the soup into bowls and let everyone go wild with their favorite toppings. Avocado, sour cream, shredded cheese, crunchy corn chips, or even a few slices of jalapeño—it’s your taco soup, your way!

Tips For Making Taco Soup

  1. Control the Spice Level: Start with slightly less spice and adjust as you go. The flavors develop as the soup simmers and get even better the next day!
  2. Rinse the Beans: Always rinse and drain canned beans to remove excess sodium. Using low-sodium beans is another great way to keep things healthier.
  3. Choose Your Beef Wisely: Ground beef works wonderfully, but lean options keep the soup lighter while still hearty.
  4. To Thicken: If your soup turns out thinner than you’d like, stir in some tomato paste to give it a richer, thicker consistency.
  5. Taco Seasoning: While we’ve shared the ingredients for homemade taco seasoning, a store-bought package works just as well if you are short on time.

Variations to Try

  1. Switch Up the Protein: Swap ground beef for ground turkey, chicken, or even plant-based crumbles for a vegetarian option.
  2. Build Smoky Flavor: Add chipotle powder or fresh chipotle peppers if you love a smoky kick. Cayenne or chili powder are good backups for a spicy boost.
  3. Experiment with Beans: Black, kidney, pinto, or cannellini beans all work well. Try a mix for extra variety, or add lentils for a hearty twist.
  4. Make It Creamy: Stir in a dollop of sour cream or cream cheese at the end for a rich, creamy texture.
  5. Add a Smoky Depth: Enhance the flavor with smoked paprika, chipotle, or fire-roasted tomatoes.
  6. Top It Your Way: From shredded cheese to jalapeños and avocado, let everyone customize their bowl with their favorite toppings.
  7. Use Leftover Veggies: Taco soup is a fantastic way to clean the fridge—toss in any extra veggies for added flavor and nutrition.
