Potato Soup

A silky-smooth potato soup made with tender potatoes, simple pantry ingredients, and a splash of cream for an easy, cozy meal any night of the week.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 1 clove garlic crushed
  • 2 pounds potatoes peeled and diced
  • 4 cups chicken or vegetable stock
  • ½ cup heavy cream
  • salt to taste
  • pepper to taste

Optional

  • bacon pieces cooked
  • cheese shredded
  • green onions finely chopped
  • 1/4 cup flour

Instructions

  • Heat oil in a large pot over medium heat.
  • Add diced onion and cook until softened, about 5 minutes.
  • Stir in garlic and cook 1 minute.
  • Pour in stock, stirring well.
  • Add potatoes, bring to a boil, then reduce the heat and simmer for 15–20 minutes, until tender.
  • Turn off the heat and stir in the cream.
  • Season with salt and pepper.
  • Blend soup until smooth, working in batches if needed.
  • Return to the heat and warm until simmering
  • Garnish with bacon, cheese, and scallions before serving.

Notes

Optional
If you prefer a thicker soup, add 1/4 cup flour to the sauteed onions and garlic. Cook for a minute. Slowly add the broth stirring well to avoid lumps. Continue with the recipe above.
