Homemade Granola

This easy homemade granola is made with simple ingredients. It bakes up golden and crunchy with delicious clusters, making it a healthy and tasty choice for breakfast or snacks.

Ingredients

  • 3 cups old-fashioned rolled oats 270 g
  • ½ cup whole almonds 70 g
  • ¼ cup shredded coconut 20 g
  • ½ teaspoon salt 3 g
  • ½ teaspoon ground cinnamon 1 g
  • cup maple syrup 110 g
  • ¼ cup coconut oil melted (56 g)
  • 1 teaspoon vanilla extract 5 ml
  • ¾ cup dried cranberries 100 g

Instructions

  • Preheat oven to 325°F (160°C). Line a large baking sheet with parchment paper.
  • In a large bowl, combine rolled oats, whole almonds, shredded coconut, salt, and cinnamon.
  • In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla extract.
  • Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  • Spread the mixture evenly onto the prepared baking sheet. Press down lightly to encourage clusters.
  • Bake for 20–25 minutes, stirring once halfway through, until golden brown.
  • Remove from the oven and allow to cool completely without stirring to form clusters.
  • Once fully cooled, stir in dried cranberries.

Notes

  • Peanut granola: Replace the almonds with peanuts and the coconut oil with natural peanut butter. Increase the peanut butter to ¾ cup and use honey instead of maple syrup.
  • Leave it alone: Once the granola comes out of the oven, resist the urge to stir it. Let it cool completely before breaking it apart.
  • Press it down: If you want those big, bakery-style clusters, press the mixture firmly onto the baking sheet before it goes into the oven.
  • Don't over bake it: The granola should be golden brown when you take it out. It will still seem a little soft, but don't worry. It gets crisp as it cools.
