- 4 medium apples
- 1 cup rolled oats
- ¼ cup brown sugar
- 1/4 cup Raisins
- ¼ cup melted butter
- 2 tsp ground cinnamon
- 1 tsp ground ginger
Preheat oven to 180C (360F) and grease a baking dish.
Soak raisins in boiling water.
Mix the sugar, oats, cinnamon, and ginger in a mixing bowl, then stir in the melted butter.
Drain raisins and fold into the oat mixture.
Core the apples, leaving the bottom intact so the filling stays put while baking.
Spoon filling into each apple, packing gently.
Place apples in the baking dish, add water, and cover with foil. Bake for 20 minutes, remove the foil, and bake for 15 more minutes.
- Choose a firm apple variety, like Honeycrisp, Pink Lady, Braeburn, or Granny Smith, so the apples hold their shape instead of turning mushy.
- Check for doneness by piercing with a toothpick. The apples should be soft enough to insert the toothpick, but not falling apart.
